What’s in Your Closet?

While browsing through some old photos of our kitchen, I stumbled across this image I took to spark a discussion about the importance of nutrition. As you can see, we have all the food groups represented: the fruit and veggie group, the meat and dairy group, a mysterious thing in tupperware that might have some grains or something in it, and the ever important egg-whites-in-a-carton group. We even have fat (to be used sparingly) in the form of mayo, bashfully hiding behind the hummus and egg whites. Our fridge tells you two things: 1) we do our best to eat lots of protein and fresh fruits and vegetables, and 2) we basically empty our bank account at Trader Joe’s. (And I swear that meat drawer isn’t full of Ben and Jerry’s and twinkies.)
Now that we’ve shown you ours, it’s your turn to show us yours. What are some staples of your refrigerators? Reveal it all, or better yet, send us a photo. We all need ideas for fast healthy meals!



I empty my account at TJ’s too, as well as Monterrey Market (cheap fruits and veggies, and a pretty good selection on organics), Berkeley Bowl (produce and seafood; weekday mornings are best), Tokyo Fish Market, and Ranch for Asian spices…and I have to confess I empty my pennies at the pastry shop too…sometimes:)
I share a fridge with three others…so no photos from me! Staples would have to be apples, pears, baby bananas, romaine, carrots, celery, turkey breast, smoked salmon, babbaganoush, dark rye, whole olives, Asian herbs, usually a few frozen tubs of homemade chicken or split pea soup, frozen chicken breasts, and brown rice.
My favorite fast and healthy sandwich: smoked salmon w/hummus on dark rye…yum!
Has anyone ever tried the low carb noodle Shirataki? I highly reccommend it…its suppose to have some great nutrients and its very low carb (made from a plant)….so its great for noodle lovers like me…with no guilt.

my favorite fast and healthy meal is: any meat or fish marinated in olive oil (just a smidge) red wine vinegar or lemon, any spices on hand… right now my favorites are garlic powder, some kind of mixed spice (emerils i think) and parsley. let it sit appropiately ( you know a little time for fish, more for pork or beef) and pop in the oven at 425 and do the finger poke to make sure it’s done. serve with brown rice and huge piles of any veg in the house. do NOT follow with duncan hines frosting in a can eaten with a spoon.

Here I am, the lurker, finally contributing! Favorite fast and healthy meal:
Sauté garlic and large shrimp (or tofu), mix with steamed asparagus pieces (or other veggie) + cooked whole-wheat penne pasta (2 oz. uncooked/per person). Serve with a salad of grapefruit slices +1/4 avocado + endive. Yum!
My, soon-to-be, favorite is Turducken and spinach salad.

I actually dislike the Shirataki noodles. They smelled funny to me, and I know mine were well under the expiration date. Anyways… I confess to many dinners of high fiber cereal with soy milk, raisins, and almonds with a sprinkling of cinnamon. However, this is what I ate for lunch: sauteed bokchoy with lots of garlic and ginger, kamut berries cooked in veggie broth, and edamame. All mixed together. And I confess to 2 fortune cookies, one of the fortunes was: “Don’t accept that others know better than you.”
Hey, Kelly, we have the same fridge.
We do our weekly shopping at the Berkeley Farmers Market. We may be the only people who buy 12 heads of kale and collards each week.
O.k. staples in the fridge are: egg whites, baked tofu, fresh tofu, skim milk, eggs, fresh spinach, kale, collards, brocolli, apples, low fast swiss slices, some really excellent cheddar from Cheeseboard, berries, melon, jars of homemade spaghetti sauce, cottage cheese, plain yogurt, and lots and lots of peanut butter.
In the cupboard are loads of dried beans (get a pressure cooker – much much yummier than canned beans), rice and quinoa, raw nuts, all kinds of things 4 year olds like (Cheddar Goldfish, snap pea crisps, cookies, ZBars) and chocolate.
I have tons of quick, healthy meals I’m happy to share another time. The one I am making tonight is tofu and brocolli in peanut sauce. Sautee tofu cubes until golden. Steam brocolli in crushed garlic, ginger and red pepper flakes. Toss tofu and brocolli with peanut sauce (extra points for homemade: 1/4 c. peanut butter, 3 TB soy sauce, 3TB mirin or wine, 2TB water and 1TB toasted seame oil).
OMG Eric, I laughed so loud, Etta came over and demanded to see what I was looking at. Then she said, “That doesn’t look very funny. You must have to be a grown-up to think refrigerators are funny.”
Shari, it’s not Kelly’s fridge–dead giveaway: no cake! You should have known that was our fridge (but the writing was courtesy of me and Ms. Mills!) when you saw the carton of egg whites.
I can finally say we have a healthy refrigerator, and the dry foods not too bad! But I had a delicious cake in my next door neighbors frig….I’ll show you pictures tomorrow Kelly. I can make you one sometime when I get my resolve back! It was a little hard to be around all…that…SUGAR! The first graders love the Dr. Suess cake and they said it was good. I was sick of looking at it, so none for me.
I thought that fridge was too organized for a house with a kid. But then, Kelly’s been cooped up alot lately.
I can’t show you pics of my fridge because it’s a jumbly mess. But I can tell you there are two containers of egg whites on the top shelf. Haven’t missed a day in two weeks!
